Apple has changed some things around and the best way to get back to normal is by reinstalling Lion completely. This isn't much of an issue if you have backed up your data, if you haven't I suggest you look into target disk mode to pull data off of the computer before the reinstall.

Is this still lying around? It's one of the few good themes that doesn't basically look like mac normally does.
